8 ounces each: cubed (3/4-inch) boneless skinless chicken breast, thighs
2 cans (141⁄2 ounces each) diced tomatoes, undrained
1⁄2 cup dry red wine or water
3 cups quartered medium mushrooms
1 cup each: chopped onion, green bell pepper
6 cloves garlic, minced
2 teaspoons dried oregano leaves
1⁄2 teaspoon garlic powder
1 bay leaf
1–2 tablespoons cornstarch
2–4 tablespoons water
Salt and pepper, to taste
3 cups cooked noodles, warm

1. Combine all ingredients, except cornstarch, water, salt, pepper, and noodles, in crockpot; cover and cook on low 6 to 8 hours. Turn heat to high and cook 10 minutes; stir in combined cornstarch and water, stirring 2 to 3 minutes. Discard bay leaf; season to taste with salt and pepper and serve over noodles.
