6 cups reduced-sodium vegetable broth
2 pounds Idaho potatoes, peeled, cubed
3⁄4 cup each: sliced leeks or green onions, celery
1⁄2 teaspoon dried thyme leaves
Salt and white pepper, to taste
6 tablespoons reduced-fat sour cream
Snipped chives, as garnish

1. Combine all ingredients, except salt, white pepper, sour cream, and chives, in crockpot; cover and cook on high 4 to 5 hours. Process soup in food processor or blender until smooth; season to taste with salt and white pepper. Serve warm, or refrigerate and serve chilled; top each bowl of soup with 1 tablespoon sour cream and sprinkle with chives.
