3 quarts reduced-sodium fat-free beef broth
1⁄4 cup dry white wine (optional)
1 pound cubed lean beef stew meat
3 cups dried lentils
11⁄2 cups finely chopped onions
1⁄2 cup each: finely chopped leeks, carrots, celery
Salt and pepper, to taste

1 can (8 ounces) tomato sauce
1⁄2 cup dry red wine (optional)
4 cups cubed red potatoes
1 cup each: chopped onion, sliced mushrooms
1⁄2 cup each: sliced carrots, celery
1 clove garlic, minced
11⁄2 teaspoon dried thyme leaves
2 bay leaves
Salt and pepper, to taste
