Tuscan Fish Soup - Another Great 365 Crockpot Soup


6 entrée servings
1 quart chicken broth
1⁄2 cup dry red wine or chicken broth
3 pounds tomatoes, peeled, seeded, chopped
2 medium onions, chopped
3 cloves garlic, minced
1 teaspoon each: dried oregano, sage, and rosemary leaves
1/8–1⁄4 teaspoon crushed red pepper
1 1⁄4 pounds assorted skinless fish fillets or steaks (sole, salmon, red snapper, tuna, or halibut), cubed
6 ounces shrimp, peeled, deveined
Salt and pepper, to taste
6 slices Italian bread, toasted
2 cloves garlic, halved

1. Combine all ingredients, except seafood, salt, pepper, bread, and halved garlic cloves, in crockpot; cover and cook on high 4 to 5 hours, adding seafood during last 15 minutes. Season to taste with salt and pepper. Rub bread with garlic cloves; place in soup bowls and ladle soup over.

2 cans (28 ounces each) crushed tomatoes
1 can (16 ounces) tomato juice
3⁄4 cup each: clam juice, dry white wine or water
1 cup chopped onion
3 medium potatoes, peeled, diced
1⁄2 cup each: chopped celery, sliced bell pepper, carrots, mushrooms
4 cloves garlic, minced
1 teaspoon dried oregano leaves
8 ounces each: cubed skinless halibut, sole, snapper
Salt and pepper, to taste
