Great 365 Crockpot Turkey Noodle Soup


6 entrée servings
2 1⁄2 quarts Turkey Stock or chicken broth
1 cup each: chopped carrots, celery, onion, sliced mushrooms
1 tablespoon minced garlic
3⁄4 teaspoon each: dried marjoram and thyme leaves
4 ounces egg noodles, cooked
4 cups cooked diced turkey
1 cup frozen peas, thawed
Salt and pepper, to taste

1. Combine all ingredients, except noodles, turkey, peas, salt, and pepper, in 6-quart crockpot; cover and cook on high 3 to 4 hours, adding noodles, turkey, and peas during last 15 minutes. Season to taste with salt and pepper.

Variation
Turkey-Wild Rice Soup—Make soup as above, adding 1 cup cubed turnips or parsnips. Omit noodles and peas; add 2 cups cooked wild rice during last 20 minutes of cooking time.

Turkey Stock - Another Tasty 365 Crockpot Stock


Makes about 4 quarts
4 quarts water
1 cup dry white wine or water
1 turkey carcass, cut up
2 each: thickly sliced medium onions,
leeks (white parts only)
4 each: thickly sliced medium carrots, ribs celery
1 teaspoon dried thyme leaves
10 black peppercorns
6 sprigs parsley
Salt and pepper, to taste

1. Combine all ingredients, except salt and pepper, in 6-quart crockpot; cover and cook on low 6 to 8 hours. Strain stock through double layer of cheesecloth, discarding solids; season to taste with salt and pepper. Refrigerate until chilled; remove fat from surface of stock.
