2 pounds sweet potatoes, peeled, sliced (1/4-inch)
2/3 cup packed light brown sugar
Salt and pepper, to taste
2 tablespoons cold margarine or butter, cut into small pieces
1/2 cup water
2 tablespoons cornstarch

1. Layer sweet potatoes in crockpot, sprinkling each layer with brown sugar, salt, and pepper, and dotting with margarine. Combine water and cornstarch and pour over the top. Cover and cook on low 3 hours; increase heat to high and cook until potatoes are tender, about 1 hour.

Variation
Fruit and Nut Sweet Potatoes — Make recipe as above, sprinkling 1/4 cup each currants or raisins and toasted pecans between layers of potatoes. Sprinkle top of potatoes with 1/2 cup miniature marshmallows during last 5 to 10 minutes of cooking time.
