Cheddar Cheese Sauce - 365 Crockpot Recipe
Makes about 2 cups
2 tablespoons margarine or butter
3 tablespoons each: finely chopped onion, flour
1 1/2 cups 2% reduced-fat milk
2 ounces reduced-fat processed cheese, cubed
3/4 cup (3 ounces) shredded reduced-fat Cheddar cheese
1/2 teaspoon dry mustard
Salt and pepper, to taste
1. Melt margarine in small saucepan; add onion and flour and cook 1 to 2 minutes. Gradually whisk in milk; heat to boiling, stirring until thickened, 2 to 3 minutes. Reduce heat to low; add cheeses and dry mustard, stirring until melted. Season to taste with salt and pepper.
