White Chili - Delicious 365 Crockpot Recipe

1 pound boneless, skinless chicken breast, cubed (3⁄4-inch)
2 cups Chicken Stock or chicken broth, divided
2 cans (15 ounces each) Great Northern beans, rinsed, drained
1 cup each: chopped red or green bell pepper, onion
2 teaspoons each: minced garlic, jalapeño chili, gingerroot
1 teaspoon each: dried thyme and oregano leaves
1 tablespoon cornstarch
Salt and pepper, to taste
Tomatillo Salsa (recipe)
Reduced-fat sour cream, as garnish

1. Combine all ingredients, except 1/2 cup stock, cornstarch, salt, pepper, Tomatillo Salsa, and sour cream, in crockpot; cover and cook on low 6 to 8 hours. Cook on high 10 minutes; stir in combined remaining 1/2 cup stock and cornstarch, stirring 2 to 3 minutes. Season to taste with salt and pepper. Serve with Tomatillo Salsa and sour cream.
