2 cans (141⁄2 ounces each) diced tomatoes, undrained
1 cup chopped onion
1⁄2 cup thinly sliced fennel or celery
2 leeks (white parts only), thinly sliced
1 clove garlic, minced
1 bay leaf
1/2 teaspoon each: dried thyme and rosemary leaves, grated orange zest
1 pound salmon steaks, cubed (11⁄2-inch)
8 ounces each: peeled deveined medium shrimp, bay scallops
12 mussels, scrubbed
1⁄4 cup chopped parsley
Salt and pepper, to taste

1. Combine all ingredients, except seafood, parsley, salt, and pepper, in 6-quart crockpot; cover and cook on high 4 to 5 hours; adding seafood during last 15 minutes. Discard bay leaf and any mussels that do not open; stir in parsley and season to taste with salt and pepper.
